Healthy Banana Pancake Recipe
What kid doesn’t like pancakes right? The problem is that they are usually pretty heavy and end up doing nothing more than making the kids want to sit right down on the sofa and take a nap as soon as they are done eating. While we don’t want to deprive them of this tasty breakfast treat, the trick is to find some recipes that are not as heavy as the traditional pancakes, but are still tasty and delicious. We stumbled upon this one year’s ago and the kids don’t even realize that the pancakes are whole wheat instead of the traditional pancake mix.
Ingredients:
- 1 c milk
- 1 lg egg
- 1 c whole wheat flour
- ¼ t salt
- 1 ¼ t baking powder
- 2 bananas, mashed (if they are getting ready to turn, even better)
Method
Peel the bananas and mash them up so that they are turned into a fairly smooth paste. Add the milk and egg and continue to whisk until entire mixture has smoothed out. Gradually fold in flour, salt and baking powder and continue whisking to keep the mixture smooth.
Preheat skillet on stove (treat with a fat free butter flavored cooking spray) and then ladle about ¼ cup of the mixture onto skillet for each pancake. Pancake should be dry around the edges with bubbles bursting on top when it is ready to turn. Brown pancake and remove for service.
Because the bananas are already in the mix, the flavor will sneak right up on everyone. Of course, you can always slice more bananas and garnish the dish with slices and even some strawberries. If you are going to forego the healthy aspect of them, use a strawberry flavored syrup and can add a dollop of whipped cream. This recipe will have the entire family lining up at the breakfast table every morning.

Hmm it appears like your blog ate my first comment (it was super long) so I guess I’ll just sum it up what I wrote and say, I’m thoroughly enjoying your blog.
